Cooking delight

I mentioned before how my pantry is full of food (as well as the freezer!!!) so lately we've been recycling stuff and cooking some new things. Gary did the asparagus risotto on Thursday, and I cooked this on Friday (with the asparagus left overs).

My tia Mirta (aunt Mirta) always made this GREAT beets salad and I called her that night to ask her for the recipe because I always forget it! I forgot to write it down-again- so next time I wanna do it, I'm gonna have to call her!

So then, we had steamed asparagus with a delicious sauce, meatloaf (which wasn't very good...) and beet-apple salad. Gary liked everything, except the beet salad. I forgot he's not too keen on the mayo, and I am. But he said it was good. He ate almost all of it.

If you want the beet salad recipe, you're gonna have to call my tia. :)
